Hasn’t, so far, been convincing. Too bad. More pie for the meat eaters. Makes 1 double crust 2½ cups flour 1 tablespoon sugar 1 teaspoon salt ½ cup (1 stick) well-chilled unsalted butter ½ cup well-chilled leaf lard 1. Fill a spouted liquid measuring cup with about 1½ cups of water, plop in some ice cubes, and place it in the freezer while you prepare the next steps of the recipe. The idea is to have more water than you need for the recipe (which will probably use ½ cup or less) at a very cold temperature, not to actually freeze the water or use all 1½ cups in the dough.
Set a timer for the minimum time range speciﬁed and check on the pie when the timer goes oﬀ. If the pie doesn’t look blond and blistered, check on it again in 5 minutes. And again in 5 minutes, if that’s what it takes. Don’t reduce the heat until the pie looks like it’s ready for a lower temperature, and be careful not to leave the oven door open for too long. The same goes for the second half of the baking process, when the lower heat cooks the fruit and thickens its juices. If the fruit/ thickener balance is right, the pie isn’t done until the juice bubbles slowly at the edges.
If you’re new to pie-making, I suggest ﬁrst trying out a couple of the more traditional recipes that comprise the rest of the book before moving on to this looser recipe. Fruit pie ﬁlling has ﬁve essential ingredients: fruit, sweetener, salt, spice, and thickener. Wrap that up in dough, and you have a double-crust fruit pie. ★ Fruit Start with fruit, using what tastes best as your guide. Notice I said what tastes best rather than what looks best. Once fruit becomes pie, the beauty contest is over.
